I did a poll recently on my InstaStory and one of the things you all asked for were more quick and easy meals. If you follow me on Instagram then you will see a lot of my quick, easy and healthy meals in my stories as I’m making them. But, I thought it would be nice to start sharing them here so you all can come back to them when you need some ideas.
In honor of the Super Bowl coming up here are a couple of recipe’s utilizing Moore’s Original Buffalo Sauce. I mean don’t you associate eating wings and having a beer when watching Football. Ok, well I know not everyone drinks beer, HA I sure don’t Eeewww!! Ok so that was a little overkill; but really buffalo anything and sports are just a thing. It’s like Lucy and Ethel or Batman and Robin…THEY JUST GO!!
Ok so this first recipe is was created because I was craving stuffed peppers. Actually, to be honest, I walked into the dining room, interrupted James’ work day and said “I’m craving stuffed peppers. Do you want Mexican style or Buffalo?” and from this post, I guess you know which won. So I found a way to make these healthy and fit within my current eating plan. I’m not full on counting macros, but sorta…I can’t fully commit! Plus, doing that all the time is hard work if you’re creating your plan on you own!
One thing I do to make our meal prep during the week is make about 4 pounds of chicken in the crockpot. Then we create meals with it pretty much every day. I’f you wanted to take these to a Super Bowl Party you could easily stuff the mini peppers and make this into an appetizer! If you are counting Macros, I put these into My Fitness Pal to get the numbers for you, I hope I did this right!
Buffalo Chicken Stuffed Peppers
Serves 4
Extra Virgin Olive Oil, about a TBSP swirl in pan before putting chicken in pan
12 ounces Shredded Chicken, recipe here
1/2 tsp Dried Dill
1/2 tsp garlic powder
1/2 tsp Onion powder
1/2 tsp parsley, dried
1/4 C Moore’s Original Buffalo Sauce
4 Bell Peppers, cut in half and seeds/membranes removed
Toppings: Feta Cheese, Avocado (smashed with red onion), Jalapenos
To Cook: Preheat Oven to 350 degrees. Heat oil in pan. Add chicken, Dill, garlic and onion powders. Once chicken warmed through, about 5 minutes, add the buffalo sauce. Mix until evenly coated and warmed through. While chicken is warming, cut peepers in half, remove seeds and membranes, then place in square baking dish.
To assemble, divide chicken mixture into 4, about 3 ounces, and fill the peppers. Bake about 15 minutes, or until peppers are soft. Remove peppers from oven. Place toppings on. I sprinkled with feta and put the avocado on mine, James only feta cheese. I served with 1/4 cup quinoa that I made with the same seasonings in this recipe.

SO, they’re that easy and they were so delicious! I have been craving them ever since. The next recipe is so super easy and simple. It’s a quick and salad that’s perfect for lunches. In fact, I actually made this yesterday for lunch and decide it was so good that I am including it in the post!
Buffalo Chicken Salad with Brown Rice + Feta
Serves 1
3 ounces chicken, same as above, recipe here
1/2 tsp garlic powder
1/2 tsp dill, dried
1/2 C Brown rice, cooked
Handful of Baby Kale
1/4 C Feta cheese
Moore’s Original Buffalo Sauce
To prepare: Heat chicken with garlic and dill. Add a handful of baby kale to a bowl. Top with cooked brown rice, chicken, and feta cheese. Drizzle buffalo sauce on top and ENJOY!
Calories: 341 // Carbohydrates: 31.1 // Fats: 13.2 // Protein: 26.1
Once again, this is super easy to make and even prepare ahead of time if you’re planning and making meals on Sunday for the week. Another option is to drizzle a balsamic glaze over the salad, or whatever your favorite dressing is. It’s super easy and I use this chicken throughout the entire week to create different meals by adding seasonings to it to mix it up. Other ideas are chicken fried rice, but actually use riced vegetables, or chicken quesadillas.
