If you’re anything like me, then coming up with meal ideas is easy some weeks, and other’s its pure torture. I am pretty good at just creating something on the fly and it turning out pretty good, but I rarely remember exactly what I did because I don’t measure anything. So if it turns out good, I’ll remake it, but it’s never quite the same. Always similar, and sometimes it just gets better with each time making it.
But one thing that is always the same, is that my meals are quick and easy. I mean I have two kids that are constantly vying for my attention, even when I’m cooking. So I like to have a plan to make this process much easier for me. One of my short cuts is to use a rotisserie chicken. Don’t get me wrong, I occasionally love to pick one up and just eat it with some veggies. But, more often than not I like to use the chicken for other meal ideas.
One thing I make a ton of is barbecue chicken pizza or most of the time, I’d say it’s a a tostada. It’s such an easy lunch or dinner and doesn’t require a lot of ingredients. But, I wanted to try and do this with a homemade barbecue sauce to make a little healthier than store bought. Now, who knows if I actually achieved that, but this sauce is really good.
I love that it’s not only great for this, but it’s great as a marinade, dipping sauce or grilled chicken, ribs, etc…I hope you enjoy this recipe. Let me know if you try to make this. Comment below or share it on social and tag me!
Coca-Cola BBQ Sauce Chicken Pizza
1 personal pizza crust, or tortilla
¼ C Coca-Cola BBQ Sauce
1/3 C Shredded Mozzarella Cheese
4 oz Shredded Rotisserie Chicken
¼ C Red Onion (optional)
For the Sauce (makes 2 cups)
1 C Coca-Cola
1 C Ketchup
¼ C Brown Sugar
1/3C Worcestershire Sauce
2T Red Wine Vinegar
½ tsp Chipotle & Adobo Sauce (or to desired level of spiciness)
2 tsp minced garlic
½ tsp onion powder
Black Pepper to taste
To Make Sauce: Heat sauce pan on medium. Add all ingredients, stirring until sugar is dissolved and comes to boil. Lower heat and let simmer for 10 minutes. Remove from heat and let cool for 10 minutes. Use immediately or store in refrigerator up to 7 days.
Spread BBQ sauce on pizza crust, leaving a small boarder around edges (Note: depending on the size of your crust, you may want to add more sauce).
Sprinkle mozzarella cheese on top of barbecue sauce, then evenly distribute the chicken on top of cheese. Scatter red onion on top next. If desired, drizzle 1 tablespoon barbecue sauce on top.
Bake pizza for 8-10 minutes, or until cheese is fully melted. Remove pizza from oven, then slice and serve.
