Happy Friday! So excited for the long Memorial Day weekend ahead. This weekend always holds a special place in my heart because we got married over Memorial Day weekend. It was so fun and I’m excited to celebrate our anniversary. But, we do always take time on Monday for the Memorial Day fun by grilling out and enjoying being outside!
Now that the weekend is here, you may be planning out your menu and doing your grocery shopping. If you want more than the typical grilling out burgers and hot dogs I’m sharing some other great ideas below.
Don’t get me wrong, I definitely like those things, but a lot of the time I just like to mix it up. Well, for example one of the recipes below is a burger, but it’s different. It’s a Southwest burger with taco seasoning, sautéed peppers and onions and yummy melted cheese on tops. Sounds amazing right? It really is!
So I wanted to put together a few meal ideas that you could serve other than just your basic grilling of ribs, steak, or plain hamburgers and hot hot dogs.
The first two meal ideas are so, so easy. The recipes I created actually use rotisserie chicken, but you could easily take a couple of pounds of chicken and shred it in the crock pot. I love this crockpot chicken, because it can be used for just about anything.

Rotisserie Chicken Tacos with Corn Salsa
Those are so so easy, and very quick to make. The BBQ sauce from the chicken recipe will make a fair amount. So other things you could do with it are put it on left over shredded chicken for a BBQ Chicken Salad, or just marinate chicken in it to grill for Grilled BBQ Chicken.
If you like buffalo chicken, then you will like the recipes in this post. When I created them I was following a Macros meal plan, so feel free to actually put more chicken in to fit your liking.
Two Quick and Easy Buffalo Chicken Meals
Lastly I will share my favorite way to eat a burger, the Southwest Burger. I made these on a whim one night and it’s now one of my favorites. I use ground turkey, but you could easily swap it out for ground beef.
Southwest Turkey Burgers
SERVES 4
1 lb Ground Turkey (or beef if you want)
3 Tbsp taco seasoning, divided
1/2 Tbsp Worcestershire sauce
1/2 Tbsp Dried, chopped Onion
1 tsp crushed red pepper, optional
1/2 yellow onion, sliced
1 Bell Pepper, cut into strips (I buy the pre-sliced tri-colored peppers)
4 Slices cheddar jack cheese Bell Peppers
Extras: Buns, lettuce (I serve mine lettuce wrapped), Avocado/guacamole, Jalapeños
To Cook: pre-heat grill pan, or grill and spray with cooking oil. In large bowel combine ground turkey, 1/2 of taco seasoning, Worcestershire sauce, dried onion and crushed red pepper (if you want it). Mix together, then divide into 4 patties.
While burgers are cooking. Sauté peppers and onions in 1 Tbsp extra veirgin olive oil, with rest of taco seasoning.
To assemble: once burgers are cooked, top each with peppers and onions and cheese. Once cheese is melted, they’re ready to serve!
Serve with fries, tots, Spanish rice, chips or side salad. In the photo, I paired it with cauliflower tots I found at Costco!
