I don’t know about you, but I am always looking for short cuts with it comes to cooking. I would say I cook a lot from scratch, or just making things up. Most of the time I don’t measure anything, but things tend to turn out pretty good. Anyway, there are days when I’m running short on time and need to make a quick dinner. One of my go-to’s is to pick up a rotisserie chicken and do something with it. So I wanted to share one of my easiest rotisserie chicken recipes with you.
You may remember my BBQ Chicken Pizza recipe, also made with rotisserie chicken. It’s also super simple, which is what I need. Like me, I’m you are busy with work, kids, school and everything else life throws at you.
So finding short cuts to make meal prep a little smoother is what I’m all about. Today’s recipe is no different. I’ve made these tacos a ton and J and I just love them. I love that they are simple, flavorful and of course super quick to make.
The corn salsa is great way to get in some veggies, which we all know can be a little tricky when making tacos at home. The best thing about it is you can really add the things you have on hand. I’ve mixed it up by adding an avocado, black beans or some kind of cheese.

Rotisserie Chicken Tacos with Corn Salsa 
Serves 2
8oz Shredded Rotisserie Chicken
4oz Can of Corn
½ Red Bell Pepper, diced
¼ Red Onion, diced
1 Jalapeno, diced
1 Lime, zest and cut in half
2 TBSP Plain Greek Yogurt
6 Small Corn Tortillas
Make Crema and set aside: mix greek yogurt, lime zest and a squeeze of lime juice in small bowl. Stir in ½ tbsp water (may add more to give crema a drizzling consistency).
For Corn Salsa: in small bowl mix together corn, diced red bell pepper, onion and jalapeno. Squeeze in remaining lime juice and stir together.
Assemble tacos: evenly distribute chicken between tortillas. Top with corn salsa and drizzle with lime crema. Optional Toppings: Feta Cheese, Avocado and black beans.
